Christmas preparations are in full swing and we thought it would be fun to share a few recipes with you this week that are quick and easy, and sure to be a hit with your friends and family!  Neither is terribly healthy, but hey, that’s what New Year’s Resolutions are for!

 

VELVEETA CHEESE FUDGE

INGREDIENTS

First Mixture

•1 Pound – Velveeta Cheese

•1 Pound – Margarine

•1 Tablespoon – Vanilla

Dry Ingredients

•4 Pounds – Powdered Sugar

•1 Cup – Cocoa

•6 Cups – Pecans (Optional)

DIRECTIONS

Butter two 13×9 dishes.

In a large microwavable bowl, combine Velveeta, Margarine, and Vanilla.  Heat in microwave until melted.

While waiting on the first mixture to melt, in another bowl combine Powdered Sugar, Cocoa, and Pecans.  Mix well.

Once the first mixture has melted, stir in the dry ingredients. Mix well.

Spread in buttered dishes,

Chill 1 hour.  Slice.  Serve.  Say “Yum!”

 

If you missed the Nice list (again) this year, you should be celebrating!  Trust me, you’ll want a lump of coal in your stocking!

LUMPS OF COAL

INGREDIENTS

•16oz Package of Oreos

•5 Cups – Large Marshmallows

•4 Tablespoons – Butter

DIRECTIONS

Line a cookie sheet with wax paper. Set aside.

Using a food processor, finely crush Oreos.

In a large microwavable bowl combine Marshmallows and Butter.  Heat until melted.

Mix in crushed Oreos.  Stir well.

Using a spoon, drop and form lumps of coal onto your cookie sheet.

Allow to cool.  Sneak a bite.  You’ll end up with an extra lump of coal in your stocking. Cha-ching!

Mom’s house (Patsy) on Sunday evening.  Patricia is playing the accompaniment music for the Christmas Eve Service at church, led by all the children, and on Christmas day we are planning to go for a ride in the mountains!  We are really looking forward to time with our families, and celebrating all that Christmas means to us!
